Growing up, traditions and family gatherings always centred around food, family and laughter - and this sense of togetherness fueled by food is still the driving force behind Brian’s passion for cooking. If you ask him to describe the best part of his career, he likely won’t mention the years he spent working as the team chef for the Calgary Flames, or his time leading fine dining at the Scotiabank Saddledome, or even bother to name drop one of the many celebrities he’s had the opportunity to cook for. What Brian will describe is a moment: at the end of his night when all is said and done and he’s standing back after the meal looking out onto the dining room. Guests are enjoying their wine, eating off each others plates, and everybody is laughing. They don’t know what he did behind the scenes - they’re simply enjoying shared company without thinking of anything else. That is where he finds the greatest reward.
